Light dinner/snack for 2. Mildy spicy.
Boil potatos and carrots in about 1" of water in a medium pot. Simmer covered until tender but not really mushy (unless you like puree). With potatoes about 3/4" cubes and carrots a bit smaller, it's about 12 minutes of boiling.
Add coconut cream and seasoning. Stir until all mixed. You can simmer a bit more if desired, but it's not really necessary.
Eat!
Note that there are 2 envelopes per packet that you buy so you could make this recipe 4 times over...
