Greek Spinach Pie

Filling: Thaw and barely cook 1 package frozen, chopped spinach.  Drain thoroughly.  Mix 1 egg yolk, 1/2 cup grated feta cheese and 1/2 cup tangy cottage cheese or other cheese such as Caerphilly, 1 tsp shallots or green onion, 1/2 tsp Italian seasoning, 1/2 tsp salt, and the spinach.

Crust: Melt 3/4 stick butter (3 oz) + 2 tbsp cooking oil.  Use a 7.5 x 11.75 inch pan and sheets of filo dough (Appollo brand is good) about 16 x 12 inches.  Brush with butter and oil until all is used up (8-12 sheets of dough) stacking each sheet on the previously buttered sheet.  Place in pan and wrap around the filling, tucking the edges under.  Bake at 350 deg for 30-45 minu until puffy and brown.
