Brownie Cheesecake Bars
Brownie Cheesecake Bars
Makes 24-36 brownies
- 1 (21.5-23.7 oz) package fudge brownie mix
- 3/4 cup chopped walnuts (mer says ick)
- 1 (8 oz) package cream cheese, softened
- 2 tbsp margarine or butter, softened
- 1 tbsp cornstarch
- 1 (14 oz) can Eagle Brand Sweetened Condensed Milk
(NOT evaporated milk)
- 1 egg
- 1 tsp vanilla extract
Preheat oven to 350 degF. Prepare brownie mix as package directs, stir
in nuts. Spread into a well greased 13x9 inch baking pan. In mixer
bowl, beat cheese, margarine, and cornstarch until fluffy. Gradually
beat in sweetened condensed milk, then egg and vanilla until smooth. Pour
evenly over brownie batter. (FYI: mer baked the brownies first then
rebaked it w/ cheesecake topping because
she misread the directions. It worked fine.)
Bake 35-40 minutes or until top is slightly
browned. Cool; chill. Garnish as desired. Cut into bars. Store
covered in refridgerator.

mer's variations:
Turns out you can make just the cheesecake topping part.
Bake it separately (about 25-35 minutes?). We topped it with canned
cherry pie filling, yum.
Or, bake a chocolate cake mix (thin, and I cut the top off to make
it flat on top), after it's done, pour the cheesecake batter on top, bake
some more. We also topped it with cherry pie filling.
This was a pretty good combo.
