Berry & Cake Cups
(feeds 9 adults + a 2 yr old after medium sized dinner)

1 (11 oz) small can mandarin oranges

1 cup water - or maybe 1/4 cup water... sunspark thought there was too
much sauce. the sugar is the correct amount for the liquid that's
left if you start with 1 cup water then throw out 3/4 cup of the
mixture. Actually, sunspark thought there was still too much
liquid, so maybe it's okay to omit the water altogether.

1 1/4 cup orange juice

3/4 cups sugar

1/2 tsp pure orange flavoring

1/2 cup water mixed with about 2 tbsp cornstarch

1 (16 oz) pkg frozen strawberries (unsweetened)

1 (16 oz) pkg frozen blueberries (unsweetened)

1 (12 oz) pkg frozen raspberries (unsweetened)

about 1 cup sugar for frozen berries
Sprinkle around 1 cup sugar on berries, more or less sugar to
taste. Defrost according to package directions (30 minutes, but
we did more like 45). Boil first 4 ingredients. Add orange
flavoring, then water&cornstarch mixture. Stir until
thickened. Pour over defrosted berries.

4 pkgs (5 oz each, 6 cakes/pkg) Mollie Stones desert cake cups

1 pint heavy cream, whipped with sugar to taste
Put a cake on each plate, spoon some berries stuff (1 large serving spoonful)
onto cake. Top with whipped cream.
