Baked Eggs With Ricotta

2 tbsp butter, melted
1/2 cup ricotta cheese
2 teaspoons snipped fresh chives
4 eggs
1/2 cup whipping cream
salt and freshly ground pepper
whole chives to garnish


1) dishes, leveling surface with a teaspoon.  Sprinkle cheese with chives.

2) Break an egg into each dish and top with cream.  Season with salt and freshly ground pepper.

3) Place dishes in a shallow baking pan half-filled with warm watter.  Bake in preheated oven 10-12 minutes until eggs are cooked as desired.  Garnish with whole chives.
